List of ingredients

·          Homemade puff pastry (2)

·          125 g sugar

·          60 g soft butter

·          2 eggs

·          150 g almond powder

·          1 vanilla pod

·          2 spoons of rum

·          1 egg to brown the patty with 1 pinch of salt

·          Optional: 50 g of pastry cream to make the "real" frangipane


Recipe steps 

Preheat the oven to 180°C. Whisk in the sugar and soft butter, then add the almond powder. Scrape the seeds from the vanilla pod and add them to the preparation. Add 2 whole eggs and rum or other (orange blossom, bitter almond ..). Arrange a circle of dough, place almond cream on it, leaving 2 cm of dough all around, which you wet slightly with a brush and water. Place the beans and cover with the second disc of slightly larger puff pastry, weld the edges by pressing all around. Brown the top of the cake with an egg beaten with a little salt (It will make it very liquid and easy to spread). Place the pancake in the fridge for 30 minutes, take it out, draw your patterns with a knife blade without piercing the dough, brown a second time. Bake at 180°C for 40 minutes on average, a little more if the cake is large or if the puff pastry is homemade.
